Aaaahhh…. For those of you whois somewhat tak kuasa to do any baking coz you don’t want to take out your mixer for whatever reason, this is a hassle free cookie recipe and a traditional one at that; Kuih Suji.
It calls for very little ingredients, with very few steps to follow which makes it really easy to bake anytime of the year and not just for raya.

400g plain flour
100g semolina flour
220g icing sugar
50g minced almond (lightly toasted)
1/2 tsp salt
1/4 tsp bicarbonate of soda
1) Preheat oven at 170’C
1) Combine semolina flour, salt, icing sugar, bicarbonate of soda & ghee till well mixed.
2) Add plain flour and minced almond bit by bit till it forms a dough.
3) Take a bit of the mixture, roll it into a ball and place it on baking tray. Optional: place a small piece of cherry on top
4) Bake in the oven for 15-20 minutes.
